Diana Forrow has kindly let us have the recipe she used for the cake which was so popular at our Apple Day. This cake was reported to be absolutely delicious.

Apple Cake


Flour 12oz

Fat 6oz

Sugar 6oz and 1oz

Apple (Eating) 10oz chopped into small pieces

Eggs 3

Sultanas 4oz

Cinnamon 2 teaspoon and 1 teaspoon

Nutmeg 1/2 teaspoon

Apple juice 2 tablespoon

Water 1 cup

Cook for 1 1/4 hrs at 175oC (Not Fan)



1) Chop the peeled apples into small pieces and place into a saucepan

2)Add the sultanas,1 teaspoon Cinnamon,1oz sugar and water

3)Cook until the apples are soft but do not lose their shape

4)Remove from the heat and strain the juice into a jug

5) Allow the apples to cool.

6) Put the fat and flour into a large bowl and mix with finger tips unti they appear to be like breadcrumbs

7) Add the sugar and spices and mix with the fat/flour mixture

8) Add the apples and sultanas

9) Beat the eggs and add to the rest of the ingredients together with 2-3 tablespoons of the apple juice from cooking the apples in the pan

10) Put into an 8inch tin and cook as above
